Quick and easy to make, the spicy peanut sauce gets its uniquely Oriental flavor from hoisin sauce - a blend of fermented soybeans and spices.

Ingredients:
l package (10 oz.) frozen butternut squash
8 ounces spelt spaghetti
1/2 cup smooth peanut butter
3 tablespoons hoisin sauce
1 tablespoon honey
2 - 3 drops hot pepper oil
1/4 cup fresh lemon juice
3 tablespoons sesame or peanut oil
2 to 3 teaspoons grated fresh ginger
Scallion and radish slices (garnish)
Preparation:
Prepare the squash according to package directions. Set aside.
Cook pasta until al dente according to package directions. Drain well, transfer to a heated serving platter, and place in a warm oven until needed.
Place the peanut butter, hoisin sauce, honey, hot pepper oil, lemon juice, sesame or peanut oil, ginger, and squash in a blender, and process at medium speed for 2 minutes, or until the mixture is smooth.
Pour the peanut sauce over the pasta, and toss to mix. Garnish with the scallion and radish slices, and serve immediately.
