Virtually Allergen-Free Banana Bread

Yield: 1 loaf

Ingredients:

Juice of 1 Lemon
3 Very Ripe Bananas
1/2 Cup Honey
1/2 Cup Soy Margarine
1-3/4 Cup Vita-Spelt© Flour
1/4 Cup Rice Bran
1/2 tsp. Salt
1/2 tsp. Cardamom
1 tsp. Cinnamon
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 - 1 Cup Chopped Walnuts
Preparation:

Preheat oven to 375 degrees
Mash bananas. Add lemon juice and mix until smooth.
Cream margarine and honey until honey. Add banana mix to margarine mix, cream well.
In a separate bowl mix all dry ingredients together. Add to banana mix, stir until just moistened. Fold in nuts. Scrape into a greased loaf pan
Bake for approximately 30-45 minutes. Let cool slightly on a rack before removing from pan.
