"No Need to Kneed" Pumpernickel Bread

Yield: 1 loaf

Ingredients:

3 tsp. Dry Yeast
2/3 Cup warm Water (x2)

1-1/3 Cup warm Water 2 tsp. Honey
3-1/2 Cup Vita-Spelt© flour
1-1/2 Cup Rye Flour
2 Tbsp. molasses
1 tsp. Sea Salt (or less)
1/3 Cup Oat Bran
1/2 Tbsp. Butter
1 Tbsp. Sesame Seeds, de-hulled
Preparation:

Sprinkle yeast over 2/3 Cup water. Add honey and stir.
Warm flower by placing in a 250 degree oven for 20 minutes
Combine molasses with 2/3 Cup water. Combine the yeast mixture with the molasses mixture. Stir into warmed flour.
Add salt, oat bran and the remaining 1-1/3 Cup water.
Butter a loaf pan; turn in dough. Sprinkle top with sesame seeds. Let rise to top of pan.
Bake at 400 degrees for approximately 35 minutes or until tested done. Let cool on a rack for at least 10 minutes before removing.
